Smoked duck breast, goat’s cheese and cantaloupe bites

Ready in two steps, these bites combine delicate and original flavors!
Ingredients
- 50 g (1 3/4 oz) creamy goat cheese
- 1 C. tbsp (15 ml) chopped chives
- 1 C. tbsp (15 ml) chopped parsley
- 1 cantaloupe
- 1 plate of sliced smoked duck breast
- 12 small basil leaves
FOR THE FRAGRANCE OIL
- 2 tbsp. tbsp (30 ml) olive oil
- 1 C. teaspoon (5 ml) balsamic vinegar
Preparation
- In a bowl, mix the goat cheese with the fine herbs.
- In another bowl, combine the fragrance oil ingredients.
- Cut the cantaloupe into twelve 2 cm (¾ in) thick slices.
- Spread the cheese mixture over the cantaloupe slices.
- On twelve small skewers or toothpicks, prick the slices of duck breast, making them undulate.
- Insert the skewers onto the cantaloupe slices. Drizzle with fragrant oil, then garnish each bite with a basil leaf.
